One of my dreams is to become a pastry chef, but that only remains a dream. However, I still practice and try to improve my skills at home by cooking recipes I only learned from high school.
Ingredients:
- Tart Shell / Crust
- 1 1/2 cup all purpose flour
- 3/4 cup softened butter
- 1 large egg
- pinch of salt
- 1 Tbsp sugar
- Filling
- 1 Tbsp cornstarch
- 1 cup pineapple slices in syrup
- 3 Tbsp sugar
- pinch of salt
- 1 1/2 cup water
Steps:
Crust
- Mix dry ingredients for making the crust. Sift them together over softened butter.
- Beat ingredients or do the manual cutting method to combine and until crumbs form.
- Break the egg and mix again to form a dough.
- Let dough rest for at least 20 minutes.
Filling
- Mix together pineapple and sugar.
- Add a cup of water and simmer until thick.
- Dissolve cornstarch in 1/2 cup water.
- Pour this into simmering pineapple mixture.
- Continue to simmer until it becomes very thick. Set aside and let cool.
Forming the tart.
- Take a small portion of the dough and flatten or press with a rolling pin.
- Line into molds.
- Prick crusts with fork so it releases air as it cooks in the oven.
- Fill each shell with pineapple filling.
- Take another small portion of the dough, flatten and cut into strips.
- Arrange on top of each tart like a woven blanket. Press sides to seal. See photo.
- Bake over 180 C for 20-30 minutes.
- Serve and enjoy!

In used book stores you will find cookbooks with contributions from "home economics" teachers. I always try to snag a couple.
They have great hints and surefire recipes with ingredients in our cupboards.
