Pinto Bean Brownies

A pinto bean brownie with ice cream.
Our neighbor has given me so many pinto beans that I needed to put them to good use. I remember having a recipe for pinto bean brownies and had never tried them, so decided to give it a shot. I'm guessing these are a bit healthier than the normal brownie! They are moist and tasty and don't taste like beans at all!

A pinto bean brownie with ice cream.Our neighbor has given me so many pinto beans that I needed to put them to good use. I remember having a recipe for pinto bean brownies and had never tried them, so decided to give it a shot. I'm guessing these are a bit healthier than the normal brownie! They are moist and tasty and don't taste like beans at all!

Prep Time: 20 minutes

Cook Time: 30 to 35 minutes

Total Time: 1 hour

Yield: 9

Ingredients:

  • 1/2 cup whole wheat flour
  • 3/4 cup sugar
  • 3/4 cup unsweetened cocoa
  • 1/3 cup packed dark brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup chocolate chips, divided
  • 1 15 oz. can pinto beans
  • 1/3 cup milk
  • 3 Tbsp oil
  • 1 Tbsp vanilla extract
  • 2 eggs
Ingredients for pinto bean brownies.
 

Steps:

  1. Preheat oven to 350 degrees F and spray a 9 by 9 inch baking pan. In a large bowl, combine flour, sugars, cocoa, baking powder, and salt. Mix thoroughly.

  3. Melt l/2 cup of chocolate chips in a small microwaveable bowl and microwave on medium power for 30 seconds, stirring and cooking at 30 second intervals for 2 minutes until melted and smooth. In a blender, combine beans, milk, oil, vanilla, and eggs. Add to flour/sugar mixture. Add melted chocolate. Mix until smooth. Gently stir in l/4 cup chocolate chips.
  4. Adding pinto beans and eggs to a bowl.
     
  5. Pour batter into baking pan and bake for 30 to 35 minutes until brownies are firm.
  6. Baking the pinto bean brownies.

I've made black bean brownies several times, and my husband says they're the best brownies ever. I use a brownie mix and one can of black beans, drained, and then add water to that.

Yes, I guess they add moisture. I was trying to figure out a way to use up lots of pinto beans I've been given so didn't use canned beans. Instead, I cooked them in the Instapot.
