Do some breeds of Pit Bull puppies have extra ear hair when they are born? My puppy's ear hair is long, but seems to be getting shorter as she is growing?

This is an interesting question, but I am not exactly sure what you mean by extra ear hair.
All of our dogs (granted they have not been in the breeds that fall under the Pit or Bull or Terrier categories) but all of them have experienced what we have called "wild hairs" at one point or another in their lives. Some as puppies and some as oldsters.
One got hair (and still gets) these long wild hairs around the eyebrows periodically. It will stop for long periods and then some will pop out. One got them on her ears--long hairs trailing off the underside of her ear--that was a puppy thing and stopped.
So I think you may be experiencing general wild hair growths. OR it is possible that your pup may have some other breed genes somewhere in the lineage that are popping up in the long hairs.
If the wild hairs are causing an issue (like pain or getting stuck places and becoming a nuisance) you could always trim if nuisance or talk to the vet it it is causing pain.

Thank you for your response. I found it very insiteful. I met both of Trinity's parents in person, neither had these whispy ear hairs. Their hair is short and as it should be. Out of ten puppies only my Trinity and her litter mate had this whispy ear hair trait. The rest of the puppies were pretty much carbon copies of their parents. Don't get me wrong, my baby girl looks a lot like her daddy.
We have always had rescues, so sadly I have never been able to meet any of my kids or sibling or cousin dogs' parents :( that makes me sad sometimes...I always wonder what their parents looked like and if they had siblings.

Some dogs have more hair than others. It is in the dogs best interest to keep it twinned to avoid infection
