I think the yogurt in this recipe makes these muffins extra moist and good!
Ingredients:
- 2 cups flour
- 3 tsp. poppy seeds
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1 cup sugar
- 1/2 cup margarine
- 2 eggs
- 1 cup plain yogurt
- 1 tsp. vanilla
Directions:
- In small bowl, stir together flour, poppy seeds, salt, and baking soda.
- In large bowl, cream together sugar and margarine.
- Beat in eggs, one at a time; beat in yogurt and vanilla until well blended.
- Stir in flour mixture until thoroughly moistened.
- Spoon batter into muffin tins about 3/4 full.
- Bake at 375 degrees F for 18-20 minutes or until wooden pick comes out clean.
- Cool on rack for 5 minutes before removing.
