Seasoned pork chop on asparagusI love these served with a red wine vinaigrette salad and some crusty bread with unsalted butter. This recipe is great for boneless skinless chicken breasts or thighs too.

Ingredients:

  • 4 boneless pork chops
  • 1/4 cup fresh basil, chopped
  • 2 tsp. minced garlic
  • 4 slices tomato (1/2 inch thick)
  • salt. to taste
  • 1 Tbsp. red wine vinegar
  • 2 Tbsp. extra virgin olive oil
  • 4 slices mozzarella cheese (1/4 inch thick)

Directions:

Preheat grill to medium.

Arrange chops on a large sheet of heavy duty aluminum foil and fold outer edges up to create a baking pan or use a disposable aluminum baking pan. Evenly top each chop with basil and garlic, then each with a tomato slice. Season tomatoes with salt to taste, drizzle each with vinegar, then drizzle each with olive oil, and cover well with aluminum foil.

Grill until the pork almost cooked, about 20 to 25 minutes, top each chop with a slice of mozzarella and continue grilling, covered with foil, until the cheese melts, about 3 to 5 minutes, and serve.

As long as you don't overcook, this recipe turns out so nice and tender. Slowly brown the pork chops in a lightly oiled skillet. Add cranberries, sugar and water to pork chops.

Place chops in shallow baking dish (not necessary to brown). Combine remaining ingredients and pour over chops.

Mix corn and mushroom soup. Put in baking pan. Put 1/3 or 1/2 bay leaf under each pork chop and put in pan. Bake at 350 degrees F for 1-1 1/2 hours. Serve with mashed potatoes. Corn mixture makes good gravy.
