Mix all of the preceding ingredients together and form a meatloaf in a large pan. Around the meatloaf, put a layer of onions (sliced 1/4 inch thick), 3-4 potatoes (sliced 1/4 inch thick) on top of onions. Add 3-4 carrots (sliced 1/4 inch thick) on top of potatoes. Sprinkle vegetables with parsley flakes. Cover tightly and bake at 350 degrees F for 1 hour without uncovering. Uncover and bake 15 minutes more.

We used our own recipe for meatloaf, but did add the potatoes, onions and carrots as suggested. But my daughter bought a jar of Beef Gravy and put that in first around the meat loaf and then layered the onions, potatoes and carrots. She also did not peel the potatoes and cut them into chunks rather that sliced.
