Total Time: 1 hour
Yield: 6 - 8 servings
Ingredients:
- 4 large potatoes, peeled and cut up
- 2/3 cup butter
- 2/3 cup flour
- 1 1/2 qt milk
- salt and pepper to taste
- 4 green onions, chopped
- 1 cup sour cream
- 2 cups crisp-cooked crumbled bacon
- 5 oz cheddar cheese, shredded
- 1 small head Broccoli, cooked until soft and mushy, then cut up very small (or you can mash it)
I like a pinch of garlic and onion powder when I add the salt and pepper.
Steps:
- Bake potatoes in microwave until tender. Melt butter in a medium saucepan. Slowly blend flour with a wire whisk until thoroughly blended.
- Gradually add milk to the butter-flour mixture, whisking constantly. Whisk in salt, pepper and seasonings and simmer over low heat, stirring constantly.
- Cut potatoes in small chunks. When milk mixture is very hot, whisk in potatoes and broccoli. Add green onion, sour cream and crumbled bacon.
- Heat thoroughly. Add cheese a little at a time until it is all melted in. You can cook for about 30 minutes or until done.
- You can serve this with a sprinkle of extra cheddar on top.
