Peel 5 - 6 large potatoes. Wash thoroughly, and pat dry with paper towels. Peel potatoes into ribbons using a vegetable peeler. Half fill a large pan with oil, and heat oil to moderately hot. Cook ribbons in oil in batches, 4 to 5 minutes or until crisp and golden. Drain on paper towels. Serve ribbons hot, sprinkled with salt and pepper, or drizzled with sweet Thai chili sauce.

I love this idea, Robyn! I am going to make them, separate them into four batches when draining and try one of the four flavors of Bacon Salt on each batch!
Why couldn't I just use a mandolin to cut potatoes & wouldn't the ribbons be the same as potato chips, only different shape? Either way, sounds yummy. What kind of oil do you fry the potatoes in? Thanks for your feedback.
