If you have a lot of onions, remove the skins, chop them up and then freeze.
I saw this tip about a year ago. Put your onions in a pair of pantyhose, knot under each onion and hang up in a dark dry place until your ready to use. Then as you use them, starting at the bottom of the stocking, cut off above the knot.
