Gold Post Medal for All Time! 677 Posts With all the vegetables from my garden, I decided to make my own recipe and was pleased with the results. The protein comes from the egg and cheese. Round out the meal with bread, butter and a piece of fruit.

Cook Time: 8 minutes
Total Time: 13 minutes

Ingredients:
- 1 zucchini
- 1 tomato
- 1 small onion
- salt and pepper to taste
- butter or oil for sautéing
- 1 egg
- 2 Tbsp Parmesan cheese
Steps:
- Chop the onion and zucchini. If you wish, peel the tomato before you chop it. Place the tomato in a bowl when you chop it to save the juices.
- Sauté the onion until translucent in the butter or oil.
- Add the zucchini. Sauté two to three minutes. Season with salt and pepper to taste.
- Add the tomato. Cover and simmer on low heat for about 5 minutes. The fork should pierce the zucchini, but it should not be mushy.
- Beat the egg in a bowl. Add the egg and distribute it amongst the vegetables until it is almost cooked.
- Add the Parmesan cheese and stir throughout until melted.
