I use seasoned pulled chicken as chicken enchilada. You do either rolled in tortilias or like a lasagna. On a pan, lay the tortillas, spread the pulled chicken then pour a portion of green enchilada sauce. then Monterey jack cheese. repeat it in layers. till the top and cover it with cheddar and Monterey jack cheese . then heat it at heat it in the oven till the cheese melt at 300 degrees . you can to this on green or red enchilada sauce.
