Diamond Post Medal for All Time! 1,298 Posts Delicious fresh out of the oven pumpkin bread topped with chocolate chips, pumpkin seeds and coconut flakes. Perfect for this cooler fall/winter season!

Cook Time: 60 minutes
Total Time: 1 hour 10 minutes
Yield: 1 loaf
Ingredients:
- 1 3/4 cup wheat pastry flour
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp ground nutmeg
- 2 Large eggs
- 1 cup canned pure pumpkin
- 1 cup packed brown sugar
- 1 Tbsp granulated sugar
- 3/4 cup coconut oil
- 2 Tbsp raw pumpkin seeds
- 2 Tbsp unsweetened coconut flakes
- 2 Tbsp chocolate chips
Steps:
- Preheat oven to 350 degrees F. Mix wheat pastry flour, baking powder, cinnamon, ginger, salt and nutmeg in a bowl.
- In a different bowl, add eggs, pumpkin, packed brown sugar and coconut oil. Mix well.
- Now add the dry ingredients to the bowl and mix until combined.
- Pour your batter in a loaf pan (lined with parchment paper optional) then sprinkle on top your choice of toppings.
- I put pumpkin seeds, coconut flakes, chocolate chips and sugar. Bake for 60 minutes or until ready. If the toppings are getting brown quickly, you can cover loaf with foil. Allow to cool before eating!
