Total Time: 1 hour 10 minutes

Yield: 1 loaf

Ingredients:

Steps:

  1. Preheat oven to 350 degrees F. Mix wheat pastry flour, baking powder, cinnamon, ginger, salt and nutmeg in a bowl.

  3. In a different bowl, add eggs, pumpkin, packed brown sugar and coconut oil. Mix well.

  7. Pour your batter in a loaf pan (lined with parchment paper optional) then sprinkle on top your choice of toppings.

  9. I put pumpkin seeds, coconut flakes, chocolate chips and sugar. Bake for 60 minutes or until ready. If the toppings are getting brown quickly, you can cover loaf with foil. Allow to cool before eating!
