Here's a great make ahead recipe, for a quick breakfast on the go! Not only are these delicious, but they're healthy too.
Total Time: 40 minutes
Yield: 4 servings

Ingredients:
- 1 1/2 cup quick cooking oats
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp pumpkin pie spice
- 1/2 tsp kosher salt
- 1/2 cup coconut milk creamer
- 1 large egg, lightly beaten
- 1 tsp vanilla extract
- 1 1/2 cup pumpkin puree
Steps:
- Preheat your oven to 350 degrees F, and grease a 8 by 8 pan.

- First, add all of the dry ingredients.

- Then stir them together.

- Then add your wet ingredients.

- Then mix them together.

- Add to pan and bake for 30 minutes.

- Then enjoy!
