Total Time: Prep time about a half hour. Cook time, 1 hour and 15 minutes
Yield: However you choose to slice it! 6-8 ?

Ingredients:
- 2-1/2 cup flour
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 cup white sugar
- 1/2 cup light brown sugar
- 3/4 cup vegetable oil
- 4 Tbsp butter
- 3 large eggs
- 2 tsp vanilla extract
- 1 can pumpkin
- 1/2 cup shredded carrots
Steps:
- Using a large mixing bowl, add the can of pumpkin, the 1/2 cup of carrots, white sugar, brown sugar, vegetable oil, eggs, vanilla and butter. Mix very well by hand mixing until smooth.
- Mix together in another bowl; the flour, salt, baking soda, baking powder, cinnamon, nutmeg, allspice, mix well to combine. Then add to the creamy mixture, stirring very well, folding it in to the mix until it becomes very smooth.
- I use a pan that makes 8 loaves at a time. Great gifts for the holidays. Or you can pour this batter into a 9x5x3 inch loaf pan that is already greased and floured. Bake at 325 degrees F for 1 hour and 15 minutes. Using a toothpick, to test for doneness.

Please try to list the ingredients in the order explained in the instructions...very confusing. Also, what size pumpkin?

Very tasty. But if you're making the single loaf method do NOT put all of this dough into a 9 x 5 loaf pan. It will overrun the pan and land on the bottom of your oven.
The middle will not bake properly where the dough drips off the sides of the pan. Set some of the dough aside (at least 2 cups) and maybe make muffins with it later.
