Easy, quick, and only 2 ingredients.
Mix 3/4 can of the pumpkin with one box of cake mix of your choice. Spoon in cupcake tins 3/4 full. That's it!
Bake at 350 degrees F for 35 minutes or so. So easy and so good. They are so moist and yummy! You can add nuts to mixture if you like but we like them plain.

This recipe was shared with me by a parent while I was teaching. She told me this was the way she had gotten her children to not only eat pumpkin but to also eat breakfast.
Mix together all the dry ingredients and make a "well" in the middle. In a separate bowl, beat eggs and then add pumpkin, oil and water.
Place honey, oil, eggs and pumpkin in bowl and mix. Sift flour, baking powder, baking soda, salt and spices. Add to first mixture and mix. Add raisins and walnuts.
