I want to try these but what is a jelly roll pan and can I just use a cookie sheet?
A jelly roll pan has about a 3/4" lip all the way around the pan to keep your goodies in the pan. This type of pan was popular in the post-war generation, as jelly rolls were inexpensive to make (and still are!).

A jelly roll pan is what some people call a cookie sheet (but it's not) pan that has a 1/2"-3/4" lip around it to hold things in. Some people mistakenly call them cookie sheets, but true cookie sheets are just flat sheets of metal, with a small raised edge at either end.
