Quick and Easy Cake Mix Cookies

A plate of cookies made with cake mix. I love quick recipes! These have only 4 ingredients (one of which is water) and are super fluffy. They are also lower in fat than most cookies, as there is only 4 tablespoons of shortening in the entire batch. I made mine with devil's food cake mix, but will soon be trying angel food among others.

Total Time: 15-20 minutes

Yield: 24 cookies

Source: I modified a recipe from "Money Saving Recipes".

Ingredients:

1 box devil's food cake mix
2 eggs
4 Tbsp shortening, melted
6 Tbsp water

Steps:

Add cake mix, 2 beaten eggs, 4 tablespoons melted shortening and 6 tablespoons water to a bowl and blend well.
Drop by large tablespoons full onto greased cookie sheets.
Bake in a 350 degree F oven for 11 minutes.
Put in hand, bring to mouth, chew. Now smile.:) Repeat.

I've been making cake-mix cookies for years - usually when our local humane society is having a bake sale. I can make many varieties quickly. I tend to call 'em "1-2-3 cookies" because I use one box of cake mix, two eggs, and 1/3 cup of oil. 10 minutes (+-) at 350 (depends on your area and your oven, of course). Any variety of cake mix, and add any other goodies you can think of...

I've not had a failure yet! Even make some combinations: one mix of chocolate, one of vanilla or such; then take a spoon of each and form in a little roll (like a worm!) and twist the 2 together. (My gal just called from our h.soc. for a bake sale on 10/25 Yay!) Gonna dye some mix orange & make choc.ch. faces!} Don't hesitate to experiment - you can't really go wrong!
