Diamond Post Medal for All Time! 1,298 Posts A simple and refreshing salad featuring quinoa, cabbage, fennel, tofu, and chick peas. This recipe generally feeds 15 bowl portions and we eat this as a side for a quick lunch throughout the week.
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Ingredients:
- 3 cups quinoa
- 1 small cabbage
- 2 fennel bulbs
- 1 lb tofu
- 2 Tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1 standard can chickpeas
Steps:
- You will need to cook your quinoa, follow the instructions on your quinoa bag. Then, prep vegetables by shaving two bulbs of fennel, chop cabbage and dice tofu.
- In a large pan, add a drizzle of olive oil. Sauté your cabbage, fennel and soy sauce.
- Then add garlic powder, ginger powder, and diced tofu. Sauté for a few more minutes until ready.
- Once quinoa is done cooking, transfer quinoa in a big bowl. Add your sautéed vegetables and tofu, along with a can of chickpeas. Mix.
