Topped Broiled Haddock and rice pilaf on plateI love haddock, but it is what you do with it that gives it all the pizzazz! This recipe is full of flavor.

Ingredients:

  • 1-1/4 lb skinned haddock, cut into 4 pieces
  • 1/2 stick of melted butter
  • 1/4 tsp (added to butter) garlic powder, 1/4 tsp black pepper, and sprinkle with Old Bay seasoning
  • Italian flavored bread crumbs
  • 1 large plum (Roma) tomato sliced
  • fresh basil leaves, sliced
  • handful of baby spinach
  • 1 box rice pilaf (put it in the oven)

Steps:

  1. Heat oven at 375 F to bake for 15 minutes; then broil on high for 10 minutes.
  2. Rinse haddock in cold water and pat dry. Add the spices to melted butter.

  4. Using a glass cookware, spray oil the dish.
  5. Place the fish in the dish. Add the seasoned butter. Then sprinkle with bread crumbs. Then put a slice of tomato on each piece, then pinch a few pieces of fresh basil and put that on top and add a handful of baby spinach on top of each piece. Then sprinkle again lightly with bread crumbs. Put it in the oven.

  7. Prepare rice pilaf. Add a 1/2 cup chopped baby spinach, 2 heaping Tbsp. of sliced fresh basil, a fresh sliced clove of garlic & sprinkle with black pepper! Cook as directed.

  9. Serve with the rice pilaf.

Melt 1 Tbsp. butter in a glass casserole dish. Place the fillets down on the buttered dish. Mix together the pecans and bread crumbs. Sprinkle entire mixture evenly over the haddock. Add the remaining butter, melted over each fillet. Squeeze a few drops of lemon across each fillet.

Preheat oven to 350 degrees F. Lightly coat a baking dish with vegetable oil spray. Rinse fish and pat dry.

Set aside. Combine flour and pepper in a shallow bowl. Add fillets, one a time, turn to coat well.

Italian Sausage Bread
Ingredients:

1 loaf frozen bread dough
1 lb. Italian sausage
1 egg
1/4 c. Parmesan cheese
1/4 c. green pepper, chopped
1/4 c. Cheddar cheese, shredded

1/4 c. onion, chopped
Butter, as needed

Direction:

Butter frozen loaf of bread. Thaw loaf of bread dough, but don't let it rise (1 1/2-2 hours) and set aside. Crumble and brown sausages in skillet, drain well. Add remaining ingredients to browned sausage and mix well. Roll out bread dough the length of a cookie sheet and about 6 inches wide. Spread sausage mixture out evenly the length of the dough. Roll up dough and sausage in pinwheel fashion, tucking under ends. Place on greased cookie sheet. Generously butter the top and sides of loaf. Bake at 350 degrees for 30 minutes or until golden brown. Slice thinly when cooled. Taylorville, IL

Dan I don't know if this recipe is of any interest to you, but this is my version of sausage in dough.

1 loaf of frozen bread dough thawed and raised

2 cans vienna sausage
sliced cheese
mustard
onion, diced
pickle relish

Cur off small sections of dough, flatten and spread with mustard, onion and relish, top with cheese and sausage. Wrap and seal filling inside. Bake until golden brown.

I have also done this with the whole loaf, flatten and fill with all the cheese and sausages and wrap, seal. and bake. To be sliced when done.
