Bubba's Boiled Eggs

Ingredients:

  • 6 - 12 large Eggs
  • Water

Directions:

Place eggs into a 4 qt boiler. Cover completely with water, about 1/2 inch above all of the eggs. Cover. Bring water to a good boil for 1 minute.

Turn heat off, leave boiler on stove burner. Allow eggs to sit in boiler for at least 1 and 1/2 hours. Take boiler to kitchen sink. Run cold water into boiler until water has changed out 2 to 3 times. Remove eggs from boiler, and place in a bowl.

Put bowl with eggs into refrigerator for 2 - 3 hours. This will allow eggs, when cracked, to be peeled very easy.

Bubba's Easy Deviled Eggs

Ingredients:

  • 6 large eggs, whole, hard-boiled
  • 3 Tbsp. Mayonnaise
  • 1/2 Tbsp. Mustard
  • Salt
  • Black Pepper

Directions:

Slice eggs in half lengthwise and remove yolks. Mash yolks, add mayonnaise and mustard; mix well. Add salt and pepper to taste. Mix well. Place yolk stuffing into egg white halves.

I make hard boiled eggs the same except I remove the pot from the burner after boiling. I allow the eggs to sit in the pot for 20 minutes. I also add about 1 teaspoon of white vinegar to prevent the whites from spreading in case any of the eggs crack. (05/20/2009)

I purchase pickles in large glass jars. When I am down to a few pickles left, I remove them from the jar leaving the pickling juice in the jar and add peeled hard boiled eggs for pickled eggs. Let them set for a couple days in the brine and they take on the flavor of whatever type of pickles were in the jar. Great for a side dish for BBQ, really good in a sandwich (slice the eggs), good in a potato or macaroni salad and great on their own as a snack. Saves you from having to make the brine and keeps eggs good for a couple weeks!
