My son gave me some kielbasa, the Polish sausage. I would like some recipes for its use, but not too heavy. Does one boil it, saute it, broil it? Help!

If the sausage is pre cooked, slice and use in the recipes below.
If the sausage is fresh (uncooked), saute or boil first.
If you are not a cabbage/sauerkraut fan, you can eliminate these from the recipes.
Boiled Dinner - serves 4
Start large pot of water boiling. Add potatoes and carrots, simmer about 10 - 15 minutes, until soft, but not done. Add kielbasa, and simmer 5 minutes more.
Add cabbage and simmer 5 minutes more until cabbage is done to your taste.
Serve with mustard sauce and catsup.
Mustard Sauce
Lazy Pierogi Casserole-serves 4
Mix the soup and milk in a bowl. Place all other ingredients in greased/cooking sprayed casserole dish. Pour soup mix over ingredients, mix well to coat everything.
Bake uncovered 20-25 minutes in 350F degree oven. (02/23/2007)

It depends on whether it is already fully cooked. The kind I buy is. I just slice it up over a can of Bavarian style sauerkraut in a large skillet. You can also add some sliced potatoes and sometimes I even add a can of drained green beans. Put on the lid and let it simmer until the potatoes are soft and everything is heated up well. A great meal all in one pan! You can also throw this in the crock pot. Even our young children love this meal! (02/23/2007)
I love it with fried potatoes and onions. Cut meat, potatoes, and onions into small cubes and fry up together. It is so good. Here is a crockpot recipe that we love.
Sweet and Spicy Kielbasa or Polish Sausage
In crockpot, combine brown sugar, mustard and onion; add kielbasa and
stir well to coat evenly. Cover and cook on LOW for 2 1/2 to 3 hours,
stirring occasionally.
During the last hour of cooking, I add Mrs. T's Pierogies right to the pot. I just baste them and mix them right in. There are 3 pierogies per serving and they add an additional 3 points to each serving, bringing the total for both to 5 points/serving

If the Kielbasa is fully cooked, just cut it in portion sizes, split down the middle and fry in a skillet until nicely caramelized. Then just eat as a sandwich with your favorite condiments or as a meat with side dishes. I like it sliced in potato soup, or sauteed with onions, garlic, cabbage, green peppers, and potatoes. Fry a couple of eggs to go with it for a very hearty breakfast or quick supper on a cold winter's night. (02/23/2007)

My mom used to slice some onion, zucchini, and various other veggies with the kielbasa to make a nice stir-fry with some rice.

A lady just gave me this recipe and she says its great. I am going to try it soon.
In a nonstick skillet, saute kielbasa over medium heat until lightly browned.
Add the onion, green pepper, celery, and garlic. Saute and stir for 5 minutes
or until
vegetables are tender. Transfer to a crock pot/slow cooker.
Stir in the remaining ingredients. Cover and cook on LOW heat setting for 8
to 9 hours.
Yield: 5 servings.

Oh, we just love kielbasa sausage. In the summer we slice it in half and grill it.
We also make a Low Country Boil.
In a large pot fill with water add Old Bay and bring to a boil, add potatoes allow to come back to a boil and cook for 15 minutes, add the corn bring to a boil and cook for 10 minutes, add the sausage bring to a boil again and add shrimp. Make sure the water covers everything, everything is done when the shrimp turn pink. Dump on to a large platter or on newspaper on a picnic table in the backyard during warm weather. Enjoy and you don't have a lot of dishes to clean. This usually feeds 4 hearty eaters. I serve it with some homemade bread and an assortment of cold drinks, sodas and sweet iced tea.
When I was a bride, my husband was in the Navy, stationed in Plainville, Connecticut. I am from Georgia and had never been up north. We were there for two years and I love Connecticut. We haven't visited since 1985. You live in a beautiful place! My husband was attached to a reserve center in Hartford, The reserve center moved to Plainville while we were there. We loved to visit Gillett Castle, Devil's Hop Yard State park, Old Lyme, and many other great places. I love all the fall colors. We had a favorite Greek pizza place we loved to eat at, Georges. I have never had pizza as good as that.

I would rinse a can of good saurkraut, put in a casserole dish, put kielbasa in a circle on top of kraut. Cover and bake at 350 degrees until hot through. Serve with mashed potatoes and apple sauce. This is simple and a good cold weather dish. (02/23/2007)

One way our family likes it is putting it sliced up in my Nesco roaster along with a head of cabbage, onion, garlic and about 1/2-1 c water or chicken broth (if I have it). I serve it on top of mashed potatoes and my hubby and dd cannot get enough! I use Kielbasa in potato soup. Cook up some potatoes, slice some carrots and cook in a cup of chicken broth. Mash the potatoes and add milk to the consistency you like. I slice up the sausage and fry it (you don't have to do this step, but it adds flavor). Add cooked carrots, sausage, mashed potatoes, chicken broth and milk all together. Season as you like, salt, pepper, parsley, whatever.
I also make Spanish rice and add sausage to that for one-step meal. Delish! (03/01/2007)

I have made Kielbasa every way that you can think; from a typical New England Boiled dinner to including it in a cheese and tomato omelet. My hubby especially likes it sliced lengthwise and grilled on the grill for hard roll sandwiches with Provolone Cheese and sauerkraut. Another way to enjoy it is to slice it on a diagonal into "few-bite" pieces (pre-cooked, of course) and serve with cocktail sauce. Brown kielbasa and onions in bottom of good sized stock pot. Add cabbage (chopped up), squash (sliced), and bag of carrots. Add about 1 cup of chicken broth and the water, and stew for about 45 minutes (on low heat).

Kielbasa Burritos
Start by adding a tbsp of oil to a large skillet or pot. Add potatoes and onion; sprinkle with a little salt and pepper, cooking until potatoes are almost cooked through. Add Kielbasa and broccoli or cabbage mixing all ingredients together. Cook until sausage has been browned and vegetables are cooked enough for your liking.
Serve Kielbasa mixture and refried beans burrito style or just use the tortillas on the side.

Slice the kielbasa in round circles. Slice up some peppers (green, yellow, and red), some mushrooms, and some garlic. Brown the Kielbasa in olive oil, then add the vegetables, and saute. When it's almost ready, add 2 Tbsp. of lemon juice, stir in and lower flame to make a light sauce. Cook some bowtie pasta, and serve over it.

Cut kielbasa in circles, cook over medium flame for a few minutes, slice some peppers (best is green), add to the kielbasa and add oyster sauce (half of a bottle to a whole bottle if desired). For a thinner sauce add, just a few, teaspoons of water. Cook over a medium-low flame to heat up the sauce and cook the bell peppers slightly, don't overcook the peppers. Add over rice and enjoy. I love it sliced down the center and grilled, I serve it with sauerkraut mashed potatoes, and green beans, or broccoli cheese rice and green beans.
To make sauerkraut mashed potatoes:
Melt 2 tbsp. butter in a sauce pan and about 1/2 medium onion chopped, add 1 can sauerkraut and 1/2 cup of water. Simmer covered for 30 minutes until water is evaporated.
Make mashed potatoes as normal and then add the sauerkraut to the potatoes, mmm delish! It is even better the second day!
I also do the sausage, red potatoes halved, and sauerkraut in a big pot for about 45 minutes, covered, on medium lo heat, it's all yummmy! (10/13/2008)

My favorite way to have it, is how my mom used to make it when I was growing up. I make it for my nieces now. It only takes 4 total ingredients:
Preheat oven to 350*F, cut kielbasa into bite sized pieces, I usually do half circles. Pour cans of tomato sauce into baking pan and add kielbasa. Stir in curry till desired taste. Bake in oven for 20 minutes. Sprinkle cheese over top and place back into oven till cheese is melted. Serve with salad and garlic bread. Yummy!!

This recipe is great. I think my mother found it on a package of Hillshire Farms kielbasa years ago. Today I prepare it this way for my own family. Enjoy!
Slice kielbasa into rounds and cook in a large covered skillet. Cut up pepper and tomatoes, add to pan. In a separate dish, combine cornstarch, vinegar, soy sauce, and preserves. Do not taste test the sauce at this point. Simply
add it to the pan with sausage and veggies. Now add the pineapple and the juice from the can and stir. Now taste!
Cover and simmer for about 10 minutes on low -medium.
Serve over hot white rice.

This is a great and easy recipe. Use a sheet of aluminum foil about 2 feet long. Drain a container of sauerkraut and form oblong in center of foil. Place kielbasa on top of sauerkraut. Sprinkle black pepper to taste. Cover with thinly sliced onions and wrap with aluminum foil. Cook in over at 350F for approximately one hour or for best results, cook on grill for about an hour. This recipe using Kielbasa or smoked sausage or Polish is awesome.
Cut sausage in round slices and fry in whatever oil you like til golden and caramelized, add diced onions until soft, then add a large can of diced tomatoes with liquid, a can of cream of celery soup and a can of water. Then add some dry bowtie pasta or egg noodles and the liquid will absorb into the pasta and cook it. Add more water if you wish and salt and pepper, I always double the recipe, add come original Mrs.Dash, as well, (just a bit), enjoy!! Cook on low if on stove or in slow cooker on low. (02/15/2010)
