This one is meatless:
Refried Bean Soup
Serves 4
1 small onion, chopped (or you can use a dash of onion powder)
2 cloves garlic, minced
1 tablespoon vegetable oil
1 can (32 oz.) refried beans
1 (16 oz.) can diced tomatoes, undrained
1 can (10 oz.) diced tomatoes with chilies, undrained
2 cups chicken broth
Garnishes:
crushed tortilla chips
shredded cheese or soy cheese (cheddar or monterey jack)
sour cream or tofu sour cream
Cook onion and garlic in oil in a Dutch oven over medium-high heat, stirring constantly, until tender. Add beans, both tomatoes and chicken broth, stirring until smooth. Be sure to mash the lumps of refried beans until completely dissolved. Bring to a boil, reduce heat, and simmer 15 minutes.
Ladle soup into individual soup bowls; top with crushed tortilla chips, cheese, and sour cream. Serve immediately.
I have added 1/2-pound of cooked hamburger to this.
I have also cooked it in a crockpot for a couple of hours.
