I usually just make Shake and Bake with the chicken and eat it with stuffing and a salad.
Add a cup of rice and a can of cream of mushroom with 3/4 cup water. Cover and bake. Also you could just put barbecue sauce on it and bake.
Brush chicken legs with honey and sprinkle with curry. Add salt and pepper to taste. Bake 45 minutes at 350 degrees F or until done.
I can think of a couple things,,,, what I do is cook 2 of these and then the next day, I take the chicken off the 2nd one and make chicken salad for a yummy salad... another idea is to check out pinterest ....www.pinterest.com/
For something different, I brush the chicken with Italian salad dressing and bake. Gives it a different flavor and is so good for a change.
It seems such a waste of time to just cook one serving when 2 servings take no longer and most of the time; you have a main ingredient for a day or so later. All you have to do is reheat and add a different side dish.
But if you only have one leg quarter then that is a different ball game.
I love simple dishes so I try to make mine with just a few ingredients and add my side dishes for variety. I grew up on variations of chicken & rice but this is very simple and still good.
BAKED CHICKEN AND RICE 2 generous servings
2 skinned chicken leg quarters (cut apart)
1 c. water
1 c. rice, uncooked
1 can cream of celery or mushroom soup, undiluted
Salt and pepper
butter
Preheat oven to 350 degrees.
Clean chicken (remove skin if necessary);
In a 9 x 13 inch baking pan mix the following: rice, cream of celery or mushroom soup and water.
Lay chicken (uncooked) on top of rice and soup mixture, salt and pepper to taste and dot top of chicken with butter.
Cover tightly with foil.
Bake in a 350 degree oven for about 1 hour (a little more if chicken legs are extra large) or until rice and chicken are done.
I would just cut up onions, garlic, carrots, and other vegetables, pour olive oil or coconut oil or butter on it, put it all in a bread baking loaf, and stick that sucker in the oven or toaster oven at 450 degrees for 30 minutes - or microwave it in a diferent container
