My puppy ended up with parvo. She spent 3 days at the vet. That was Monday through Wednesday. We brought her home Wednesday night and she has been eating good and playing and slowly drinking. On Saturday night she threw up once and had diarrhea once which she hasn't done since she's been home. Is this normal to do after parvo treatment? Does it come and go like that off an on like that or does that mean she is getting sicker?

This is normal, and takes time, sometimes weeks. Make sure that your fur baby stays hydrated, and follow the advise of the Vet, and she will be fine. Just remember it takes time!
Parvo is dangerous and it takes a lot of time for a dog to heal and get over it. I had one dog in the vet for 8 days and when he did come home he ate and drank normally but did not eat a lot. I had a few spells of him throwing up again.
It sounds to me like she is improving. But you should call your Vet and let them know when there are any changes. You should not be charged for the call. Parvo takes time for recovery. Up to a month for some dogs. Stay in touch with your Vet until she is 100%
