  1. Preheat oven to 350 degrees F.
  2. Combine the cake flour, cocoa, baking soda, powder and salt. Set aside.
  3. Beat the granulated sugar and butter in a large bowl with a mixer at medium speed for 4 minutes or until well blended.
  4. Beat in the egg whites for 5 minutes or until fluffy.
  5. Combine the buttermilk, food coloring, and vanilla in a small bowl with a whisk.
  6. Add the flour mixture to the creamed sugar and butter, alternating with the buttermilk mixture until all is mixed together. Don't over mix.

  8. Pour batter into prepared cake pans. Tap each pan once on counter to remove air bubbles.
  9. Bake for 28 minutes or until a wooden toothpick inserted in center comes out clean.
  10. Cool for 10 minutes before removing from pans.
  11. To prepare frosting: Mix the cream cheese and vanilla in a bowl. Beat on high speed for 3-4 minutes or until fluffy. Add powdered sugar, beat at low speed just until blended.
  12. To assemble cake: Place 1 cake layer on a plate. Spread with jam. Top with second cake layer. Spread frosting over top and sides of cake. Store cake loosely covered in refrigerator.
