Ingredients:
- 3 cups sifted cake flour
- 2 Tbsp unsweetened cocoa
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 2/3 cup granulated sugar
- 1/2 cup butter, softened
- 4 large egg whites
- 2 cups buttermilk
- 1 bottle (1 oz.) red food coloring
- 1 tsp vanilla extract
- 1/2 cup seedless raspberry jam
- Frosting
- 7 cream cheese
- 1 oz vanilla extract
- 2 3/4 tsp confectioners' sugar
Steps:
- Preheat oven to 350 degrees F.
- Combine the cake flour, cocoa, baking soda, powder and salt. Set aside.
- Beat the granulated sugar and butter in a large bowl with a mixer at medium speed for 4 minutes or until well blended.
- Beat in the egg whites for 5 minutes or until fluffy.
- Combine the buttermilk, food coloring, and vanilla in a small bowl with a whisk.
- Add the flour mixture to the creamed sugar and butter, alternating with the buttermilk mixture until all is mixed together. Don't over mix.
- Pour batter into prepared cake pans. Tap each pan once on counter to remove air bubbles.
- Bake for 28 minutes or until a wooden toothpick inserted in center comes out clean.
- Cool for 10 minutes before removing from pans.
- To prepare frosting: Mix the cream cheese and vanilla in a bowl. Beat on high speed for 3-4 minutes or until fluffy. Add powdered sugar, beat at low speed just until blended.
- To assemble cake: Place 1 cake layer on a plate. Spread with jam. Top with second cake layer. Spread frosting over top and sides of cake. Store cake loosely covered in refrigerator.
