My Hitachi Bread Machine (HB-B301) is over 20 years old. When I attempted to use it, I received an error message (--P): (1) an excessive amount of flour as compared to water. (2) An insufficient amount of water as compared to flour. (3) The seal packing is scratched.. (Ingredients block the lubricant oil between the shaft and metal of the bread pan because of the leakage of ingredients through seal packing.)
Everything looks clean. I haven't used this in 15 years. Hitachi does not respond to phone calls or e-mails. Any help is appreciated. I attempted to call Sears appliance repair and can't get past their prompts.

Sometimes it is really difficult to get a company to respond and will rarely offer support help.
I'm surprised that you cannot get through to Sears as I use this link and usually can get through but I believe they will tell you to take your Hitachi to the shop.
There are not very many Hitachi bread machine forums to ask for help but you might try one of these. You will have to join their site. Some posts may seem old but it's usually just that question as someone usually tries to help.

Here is a pretty comprehensive guide.

Wow...lots of good information from everyone who answered by plight! Thank you so much. My machine works when I put just water into the pan...the paddle begins the kneading process. I'm going to attempt once more to make bread and may end up using the "new" machine I purchased over the summer; the only problem is it has a smaller capacity.
This could be a few things, loose parts, the weight of mixture, to hot or to cold. These are just a few things that can throw error codes. Here is a troubleshooting link to all the variables .- www.ifixit.com/
