It is flat, 3.5" inside, 5" outside. Anyone know where I can find a kitchen canister gasket like that?

I would suggest going to Bed Bath and Beyond and seeing if they have some gaskets for your canister. There are a lot of markets such as Wallmart that sell a set of gaskets for canisters. You might find it there or you'll need to order online through Amazon.
You could also try a crafts store like Michael's
