I am looking for replacement gaskets for a jar that has a 5" outer ring with 4" inner ring and also a 7 1/2" outer ring with 6 1/2" inner ring.

You can go to any hardware or hobby store. Bring your gasket with you (or the jar lid) to make sure it's the right fit.
These sound like unusual jars so you might be better off taking them to an old fashion neighborhood hardware store (where they still have inventory from the 80's or 90's) if one is available in your area. If not, then someplace like Ace or True Value might be able to help you find at least one or two of what size you need.
Try Google with "old fashion hardware stores (your zip)" and you may find something in your area (big name stores will also pop up so ignore those) and plan a nice trip one day to several stores with maybe a coffee break at a never before visited cafe.
There are all sorts of gaskets for jars (rolled, gel rolled for grooved slots, flat, rubber or synthetic) so if you take your jars and lids with you someone may be able to help find something that will work.
Of course, if this something that is really necessary and not just something "wanted" then you may have to order custom made but these would be expensive. Auto stores sell a variety of gasket material to make your own but I'm not sure if any of these are safe for food.
Here is a link to a site that makes custom gaskets (they made a gasket for a very old pressure cooker) but it might take a lot of photos.
