Where can I find a mixing blade for a Hitachi HB B101?
It is hard to find just a part for an older machine. You can try eBay. You may also look up to see if the same blade is compatible with different models, and look for those machines at thrift stores and garage sales.
Hitachi HB B101 Bread Machine has been around awhile and I imagine you must really like it.
Parts are probably scarce but there may be other blades that would fit if you can find a dealer with a "book".
Have you tried Sears parts division?
They seem to have more parts for everything than anyone else.

The dough paddle on the bottom doesn't mix the ingredients. How or where can I get one?

The belt that moves the paddles may be broken. You will need to remove the bottom of the machine to see. It may be cheaper to get another one at a thrift store than to buy a new belt

Where would I find transistors? The machine still functions, but does not heat. The repair guy said it's transistors.

Tens of thousands of different kinds of transistors are available online at www.digikey.com; however, you need to know which transistor to replace. Furthermore, you need to have someone capable of electronics de-soldering and soldering to replace the part.
Sometimes when an component fails, other devices in the same circuit might be damaged; however, in the case of power transtors capable of switching a large load like a heating element, often just replacing the blown transistor will suffice.
Although I own one of these bread machines, I have never opened it to look, but this component might also be attached to a heat sink, and may require an insulator, or thermal grease in order to be installed properly.
The repair guy, if he is worth his salt, should have been able to find a replacement transistor. Some old parts transistors may no longer be available, but there is most often a newer part available that is even more capable (regarding voltage and current) than the original part.
It is worth a try to fix this type of damage, as a replacement for the failed component will probably less than a couple of dollars. If you still have the bread machine, take a close look at the components and you may even be able to identify the damaged transistor (it is probably the big one if you are not getting heat). Look up the part number on Digikey (sometimes it is a bit dificult to determine the part number, which is marked on the package not on the circuit board, without a magnifying glass. Some parts are also market with manufacturing date codes that can complicate sussing out the part number); however someone familiar with electronics should be able to identify the appropriate part number.
Digikey is fast, has no minimum order, and shipping charges are very resonable. As far as I am concerned they are an outstanding business.
