I've been dyeing my hair black for years. I want to stop having to dye it and just let it be grey. How can I best do that? It is long, so would take too long to grow out.

There are places that will dye your hair to match the gray. You need about three months worth of gray growth.
You can help the process along if you mix baking soda with your shampoo and wash your hair with this. It will help to fade out the dye in your hair a lot faster.
I stopped dying my waist long hair several years ago. At first I just pulled it back, then I started wearing one long braid. It took several months but after a few trims the dye job was finally gone. I get compliments almost daily now on my snow white braid.
My friend stopped dying her hair, cut it short, and within 6 weeks she had a great salt and pepper look. A year later it was all gray. She said keeping it short made all the difference.
