Reuben Casserole

Ingredients:

  • 32 oz. sauerkraut, drained
  • 8 oz. med. noodles
  • 2 cans chicken, celery or mushroom cream soup
  • 1 1/3 cup milk
  • 1/2 cup onion
  • 3 Tbsp. mustard
  • 12 oz. corned beef
  • 8 oz. Swiss cheese, grated
  • 3/4 cup rye bread crumbs, toasted
  • 2 Tbsp. margarine

Directions:

Layer sauerkraut and noodles in 9x13 inch pan. Mix together soup, milk, onion and mustard; spoon over noodles. Layer corned beef, cheese and bread crumbs on top. Dot with margarine. Cover tightly and bake in 350 degree F oven for 1 hour.

Have you tried making this with thousand island dressing? Just curious, because I love my reubens with thousand island instead of mustard. (03/02/2010)
