I had never had a chayote squash before, so this was a welcome addition to our dinner tonight. Feel free to use any spices you wish.
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Yield: 4
Ingredients:
- 2 chayotes
- 2 tsp dried thyme
- 1 tsp garlic
- 1/4 tsp Himalayan pink salt
- 1/2 tsp onion powder
- 1/2 tsp black pepper

Steps:
- Preheat the oven to 375 degrees F and line a large roasting pan with parchment paper.
- Cut the squash in half, peel, scoop out seeds and cut in thin slices.

- Prepare the dry rub by combining all of the herbs together in a plastic bag.

- Pour a small amount of coconut oil into your hands and coat each slice.

- Put a few slices at a time into the bag and coat both sides with the spices.
- Evenly distribute the slices onto the prepared pan.

- Roast for 40 minutes or until crisp and golden, turning over halfway.

I don't know if I've tried them either. What are they like? Is it similar to summer squash?

Yes. A mild flavor. My neighbor grew them and they came over to my side:)
