A roasted chicken in a roasting pan.We love roasted chicken. This is a simple recipe for roasting a chicken in the oven. While roasting the chicken, put some baking potatoes in the oven and plan on a pot of string beans and you will have a yummy meal. This chicken is tender and juicy and good left over for 2-3 days.

Ingredients:

Steps:

  1. Preheat oven to 430 degrees F.
  2. Rinse chicken and cut off any excess fat and skin. Dry the chicken off with some paper towels.
  3. In a small bowl, mix together the olive oil, butter, lemon juice and garlic powder.
  4. Place chicken in a large baking dish or baking pan.
  5. Spread mixture over chicken and into the cavities and under the skin of the neck.
  6. Sprinkle salt and pepper over chicken.
  7. Tie the legs together with cotton twine.
  8. Bake uncovered for approximately 1 hour and 15-30 minutes. After an hour, baste chicken with the juices. Bake until inserted meat thermometer reaches 185 degrees and chicken has browned.
