Ingredients:
- 2 Tbsp oil
- 1 Tbsp balsamic vinegar
- 1 Tbsp brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp curry powder
- vegetables of your choice: winter squash, Brussels sprouts, onions or apples. I used one large butternut squash
Steps:
- Whisk together the oil, vinegar, sugar, cinnamon and curry powder.
- Drizzle this mixture over the vegetables. Bake in a preheated 400 degree F oven for 45 minutes.
- Serve hot.
