Silver Post Medal for All Time! 355 Posts I read a similar recipe on Facebook, of course, I tweaked it a lot with all the fixings I love to use. I made this easy for myself, by using quick easy shortcuts.
Ingredients:
- 1 1/4 lb 93% Ground beef
- 1 jumbo egg
- 1/4 cup Italian flavored bread crumbs
- 1/4 cup grated Parmesan and Romano cheese
- 1/2 cup shredded Parmesan, divided
- 2 Tbsp minced onion
- 1 Tbsp minced garlic
- 1 tsp herb seasoning
- 1/2 tsp black pepper
- 3 large basil leaves, chopped
- 1 cup frozen red and green peppers and onions, sliced
- 4 oz chopped mushrooms, sauteed in butter and cooled
- 2 Tbsp butter
- 1 package Idaho instant potatoes, cooked as directed and set aside to cool down (any flavor)
- 2 handfuls fresh baby spinach
- 1 handful fresh basil leaves
- 1 8 oz. bag shredded cheese (any kind)
You can add more or less seasonings as you like it.
Steps:
- Preheat oven to 350 degrees F.
- In a medium bowl, add ground beef, egg, bread crumbs, cheese, all seasonings (however you would make your own meatloaf).
- On your counter, work space, cover it with a sheet of plastic wrap. Now, drop the ball of mixed meat in the middle. With clean hands, press out the beef shaping it into a rectangle, about 9x11.
- In the meantime, whip up the instant potatoes / or fresh, I just wanted to make this an easy recipe. When the potatoes are cooled to warm, put the potatoes on top of the beef, then using a spatula, spread evenly over the meat.
- Next, lay on vegetables. Add the sauteed mushrooms. Next I used frozen green and red sliced peppers and sliced onion, I used one cup, laid out evenly, Top a good amount of fresh basil leaves, whole.
- Start pressing this large mountain you are building. Add two handfuls of fresh baby spinach and really press this down. Last is to add in the 8 oz bag of cheese. Whatever kind you like! I like Colby.
- Spray oil the bottom of the loaf pan. Using the plastic under the meat, start lifting the plastic and rolling the meat and firmly pressing and also tucking and folding the ends in. Whatever oozes out. Just let it. When you have a good looking meatloaf, put pan beside you and very carefully lift and pop into the loaf pan. Yeah, you're done!
- Now, bake at 375 degrees F. Cover with foil for the first 30 minutes, then cook another 30 minutes uncovered. Let it cool before serving. It also slices better if cooler! I made a beef mushroom gravy. It is a complete meal in itself!
