I am looking for a tasty recipe for a salmon loaf.

Here's my mom's recipe; it's still the meal I request for my birthday supper.
Heat oven to 350 degrees F. Drain liquid from salmon into a measuring cup; add milk to make 3/4 cup. Flake salmon, removing bones and skin. Blend in egg; stir in the rest of ingredients. Spoon lightly into a greased 1 quart baking dish. Bake 45 minutes.
You didn't request it, but here's the white sauce that we pour over the salmon loaf (and mashed potatoes, peas, etc.) :)
White Sauce
Melt butter in a saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat; stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute.

This is a recipe the cook in a hospital that I worked at made at least once a month. Everyone always asked her for the recipe.
Drain salmon, save liquid. Add milk to liquid to make 1/2 cup liquid. Mix all ingredients together. Put in sprayed loaf pan Bake 350 degrees F about 40 minutes until set. (02/14/2007)
