This is a recipe for a quick and easy sauce to serve with spinach and cheese tortellini.
Total Time: 30 minutes prep time; 30 minutes cooking time
Yield: 4-6 servings
Ingredients:
- 1 can of stewed tomatoes
- 1/2 cup of frozen chopped onions and green peppers
- 1/2 tsp minced garlic
- 1/2 cup of frozen green and red pepper strips
- 1/8 tsp seasoned salt or Adobe seasoning
- 1/8 tsp black pepper
- 1/8 tsp basil
- 1/8 tsp Italian seasoning
- a sprinkle of garlic powder
- 1/4 cup grated Parmesan cheese
- 1/4 cup red cooking wine
- 2 Italian sausages, casings removed, and cooked separately in a small fry pan, keeping the sausage in medium chunks until cooked
- 1 bag of Barilla spinach and cheese tortellini
Steps:
- Using a blender, put in 1 can of stewed tomatoes, add 2 tablespoons of water by rinsing the can.
- Add to the blender, onions, peppers, garlic, seasonings, grated cheese, and wine.
- Now pour your ready made sauce into a 3 quart saucepan, bring to a boil, stirring well, then turn down to a simmer.
- Another small pot start cooking your sausages with casing removed and stirring and breaking up into medium chunks until cooked through.
- Add to sauce.
- While this is simmering, bring a medium pot of water to a boil, with a dash of olive oil and a pinch of salt.
- Pour in your Tortellini and cook as directed.
- Drain, and set aside in covered pot. If it gets sticky, add a drop of olive oil.
- Just before serving mix the tortellini with the sauce and serve hot with a garlic bread or salad.
