Silver Post Medal for All Time! 355 Posts This dish when served over rice pilaf can be a meal alone or a side dish on a holiday meal. Asparagus is wonderfully in season right now. My family loves the different ways I cook it. This is one of my easiest and tastiest.
Ingredients:
- 1 bundle of thin (pencil thin) asparagus, trim ends if needed, if the ends are lighter in color, cut them off
- 3 Tbsp fresh butter
- 3-4 large cloves of fresh garlic, chopped
- 1/2 tsp dried dill, or fresh chopped dill
- dash of salt & pepper
Steps:
- Using a large glass top skillet; melt the butter on medium-high heat.
- Toss the asparagus around to get it coated in the garlic and butter.
- Now cover and cook on medium heat for 10-15 minutes. Test for tenderness. If you like a bit of crispness 10 minutes will do, longer if you want it cooked more.
- When your rice pilaf is ready, place in a serving bowl and place your asparagus accross the top, for a beautiful presentation and a delicious meal. Enjoy! One of my family's favorites.
