Scotch Scones

Ingredients

  • 2 cups flour
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. soda
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 1/4 cup butter or margarine
  • 1 egg
  • 3/4 cup buttermilk
  • 1/4 tsp. butter flavoring

Directions

Combine flour, baking powder, soda, salt and sugar. Cut in butter or margarine. Beat egg slightly with fork and combine with buttermilk and butter flavoring. Stir into dry ingredients lightly with fork. Knead three or four times. Cut into two portions. Pat each portion into a greased pie tin. Bake in 425 degree F oven for 10-12 minutes, or until lightly browned.

Serve hot with butter, honey or jam. For a sweeter, very delicious quick bread, add 1/2 tsp. orange flavoring and 1/4 cup raisins to the dough. After patting out in the pie tins, brush the top with a little slightly beaten egg white and sprinkle with sugar. Bake as directed.
