Fresh beets are the best, however, don't throw away those beet greens. They are good too and so good for you. I'm still experimenting with them and have found that they sauté well, much like spinach.
For my breakfast, I scrambled a couple of eggs into the sautéed greens. This is added nutrition with lots of beneficial vitamins to the eggs. I'll bet the kids would even eat them this way.
Tear the greens from the stems. Cut into small pieces. Sauté one cup of greens in a little butter. Add 2 beaten eggs, seasoned as desired, and scramble with the sautéed greens. Takes only a couple of minutes to cook.
Makes 1 serving.
