Seafood Puffs

Welcome your guests with this elegant appetizer, they'll love it!

Ingredients:

Puffs

  • 1 cup sifted flour
  • 1 cup water
  • 1/2 cup butter

  • 1/2 tsp. salt
  • 4 eggs
  • Filling

    • 1 can or 1 frozen pkg. crab meat
    • 1 can shrimp
    • 1 cup mushroom soup
    • 1/4 cup green pepper (minced)
    • 1 small jar pimiento (chopped)
    • 1/4 tsp. salt
    • dash of cayenne pepper
    • 3 Tbsp. sherry
    • 1 cup buttered bread crumbs

    Directions:

    Puffs:

    1. Mix flour and salt.
    2. Heat water and butter in saucepan until butter melts.
    3. Add flour all at once and beat vigorously over low heat until mixture leaves sides of pan.
    4. Add unbeaten eggs, one at a time, beating thoroughly after each addition.
    5. Drop small teaspoonful on greased baking sheet one inch apart.
    6. Bake at 400 degreesF for 15-20 minutes, watching carefully.
    7. Split when cool and fill with seafood filling.

    Filling:

    1. Combine all ingredients.
    2. Fill puffs and put on cookie sheets.
    3. Bake at 350degrees F for 8-10 minutes
    4. Will fill about 50 puffs.

    Servings: 15-20 Depends
    Prep Time: 45 Minutes
    Cooking Time: 35 Minutes

Hi - I will have to try this recipe - sound delicious.

One problem that I find with so many recipes is when the ingredient "flour" is used and I know that a lot of "cooks" just do not know if that means self-rising or?

Usually it does but it would be much better to clarify the type used in each recipe so no mistakes would be made.

I use all purpose flour. They really are good, I've also made chicken salad and filled the puffs, my grandchildren loved them.
