Should you put "senior" in your company name if they are your major target, but it is not limited to them? Also does using the word "platinum" for a senior home care/transportation business sound cold and not warm and fuzzy, although it stands for the best?

I would prefer golden to platinum. I would not use senior if there are other target markets
I wouldn't imply that the service is for seniors if you plan to include other age groups or possibly people with disabilities. An as alternative to the word platinum you could use the word sterling which can mean thoroughly excellent.

If you are going to target other than seniors, then leave that out of your company name. I would not use anything like gold or silver or platinum, because they have a cold feeling to them and--at least to me--they say you are trying too hard to impress.
I worked in home care for 4 years and people who used our service were looking for reliable, reputable, safe, honest, and clean care to take care of themselves or their loved one. I was part of the HR/Training team and our staff had to meet rigorous standards to be hired and represent our brand.
Your name should be straight forward, to the point, and without any fluff.
If you are affiliated with a hospital or hospital group, as ours was, that should be in your name--if you have the hospital's permission--your lawyers will need to work this one out. Be sure to have your lawyer do name checks for you to make sure you are not infringing on someone else's company name as many of the best names are already taken and companies are known to sue over name infringements.
If you are independent (not under a doctor or hospital umbrella), you need to keep your name simple and to the point. Something like At Home Care or After Hospital Care or Helping Hands Home Care may work if your lawyer gives you the all clear!
