An easy way to get one coffee filter out of a stack is to use a pencil eraser. Simply place the eraser firmly against the side of top filter and slide upwards. This should easily separate one coffee filter and save you a great deal of frustration!

No more aggravation trying to get that one coffee filter. I keep a little plastic knife or spoon nearby. It has a small square of double sided tape near the tip. When I want that one filter, I just touch the tape to the filter and lift. Works every time.
