Sheet Pan Dijon-Roasted Chicken Thighs

A plate of chicken and broccoli with mashed potatoes.This is an easy, healthy and flavorful dish to make. Broccoli and chicken thighs were on sale this week as well.

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Yield: 4

Ingredients:

  • 1 large head of broccoli, cut into florets (4-5 cups)
  • Salt and pepper
  • 3 Tbsp olive oil, divided
  • 4 large bone-in, skin-on chicken thighs
  • 1 1/2 Tbsp Dijon mustard

Steps:

  1. Preheat the oven to 450 degrees F.
  2. Remove the skin from the chicken.
  3. In a bag or a bowl, toss the broccoli with 2 Tbsp. of the oil.
  4. Broccoli in a plastic bag.
     
  5. Spread in an even layer on a parchment lined pan.
  6. Pieces of broccoli on a baking sheet.
     
  7. Toss the chicken with the remaining tablespoon of oil. Put the chicken on the pan between the broccoli.
  8. Chicken thighs in a plastic bag.

  9. Brush the chicken with the mustard. Season with salt and pepper
  10. Covering the chicken thighs in dijon mustard.
     
  11. Roast 30-35 minutes, or until cooked.
