Ingredients:
- 1 large head of broccoli, cut into florets (4-5 cups)
- Salt and pepper
- 3 Tbsp olive oil, divided
- 4 large bone-in, skin-on chicken thighs
- 1 1/2 Tbsp Dijon mustard
Steps:
- Preheat the oven to 450 degrees F.
- Remove the skin from the chicken.
- In a bag or a bowl, toss the broccoli with 2 Tbsp. of the oil.
- Spread in an even layer on a parchment lined pan.
- Toss the chicken with the remaining tablespoon of oil. Put the chicken on the pan between the broccoli.
- Brush the chicken with the mustard. Season with salt and pepper
- Roast 30-35 minutes, or until cooked.
