We no longer have a Shoney's in our area so I'm not familiar with what peach dish you are referring to but since we have a good supply of peaches every year I make a lot of peach cobbler.
I also use brown sugar and cinnamon with a little butter instead of maple syrup and a family favorite is made with honey but basically the same recipe.
Maybe someone will come along that has had your dish and can help you find a closer recipe.
It does sound like some of these Shoney dishes would be very good to try.
The actual peaches they use come frozen in a #10 can. I can't remember adding anything to them before going on top of the crust batter.

#10 cans are generally sold to restaurants and large commercial kitchens. You can get them online here or maybe by going to a local food supply store.

This larger can equals 106 oz. so you could also buy several smaller cans to make up the amount you need.
