Are there any supermarkets in Northern Ireland that sell Karo syrup? Are there any recipes available that can be used in substitution?

There are other brands of syrup that are exactly like the Karo brand. Look in your stores and I bet you will see something that looks like it and would be the same only with a different name.
Karo is a corn syrup but you can make a good similar substitution:
1 cup Sugar
1/4 cup water
Boil ingredients until slightly thick. Reduce heat and simmer for 3 minutes. Allow to cool and store in the refrigerator in a lidded glass jar.
And here is what a Karo bottle looks like so it will be easier to find the same type of syrup/different brand of product in Ireland
Homemade Corn Syrup Substitute
2 cups white sugar
3/4 cup water
1/4 teaspoon cream of tartar
1 pinch salt
Homemade Corn Syrup Substitute
Combine all ingredients in a large saucepan.
Bring to a boil, stirring constantly.
Reduce heat to a simmer and put cover for 3 minutes to get sugar crystals off the sides of the pan.
Uncover and simmer, stirring often, until it begins to form soft balls when you stir.
Cool and store in a covered container at room temperature.
Karo syrup is the trade-name for corn syrup, which is glucose. Check in stores because it may be sold as Glucose in your area.
There are other brands of corn syrup. Here in Sask we do not have that brand, but I use Beehive. However, I use any kind of syrup, cane or maple, to substitute for corn syrup.
@Babbie, thank-you for the recipe! I'm an American in Scotland and having to find substitutes for pantry staples as I become accustomed to living here. Sometimes it's not hard but other times it's nearly impossible so a good recipe for a substitute is very much appreciated!

I believe you could use Golden Syrup as a substitute for Corn Syrup.
