I think this is a great variation on just plain old potato salad! Shrimp lovers will love this salad!
Ingredients:
- 2 small cans shrimp
- 4 cups diced cooked potatoes
- 1 cup diced celery
- 1/2 cup diced green pepper
- 1/4 cup diced onion
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1 cup mayonnaise
- 3/4 cup whipped cream
Directions:
Drain shrimp, add potatoes, celery, green pepper, onion and mix. Add lemon juice, salt and mayonnaise. Add whipped cream. Mix all together.
