These are healthy, fresh and delicious. Once I had these, I swore I would never get tacos through fast food drive-through again. These are full of sautéed shrimp, smothered in cilantro and mango salsa, that can leave you feeling light and energized.
Please don't be scared off by the long list of ingredients, once you taste them you will see that they are worth the effort. Enjoy!

Yield: About 8 small tacos

Ingredients:
- 1 lb peeled shrimp
- 4 tsp lime juice
- 1 Tbsp grapeseed or extra virgin olive oil
- 2 cloves garlic, pressed or minced
- 1/4 tsp freshly ground sea salt
- 1/4 tsp freshly ground black pepper
- Salsa
- 1 mango, diced
- 3/4 cup or half of a large red bell pepper, diced
- 1/2 cup or more chopped cilantro
- 1/4 cup sliced green onions
- 4 Tbsp lime juice
- 2 cloves garlic, pressed or minced
- 1/2 tsp minced jalapeno
- 1/4 tsp cumin
- 1/8 tsp chili powder
- 2 pinch freshly ground sea salt
- 2 pinch freshly ground black pepper
- 8 corn tortillas
- lime wedges
- additional extra virgin olive oil for drizzling
Steps:
- You will combine all of your salsa ingredients in a large bowl. Cover and chill in the fridge while you are preparing the shrimp.
- Quick tip on the shrimp; if you want to save a load of time, buy it already peeled!
- Heat your oil in a pan over medium/high heat. Add your shrimp, lime juice, garlic, salt and pepper.
- Stir continuously for only about 4 minutes. They cook quickly, and will now be a nice pink color.
- Add some shrimp to your tortilla, and top with salsa. Drizzle with a small amount of extra virgin olive oil, and squeeze a fresh lime wedge over the top.
- Serve with brown rice and enjoy!
