Stainless will always be Stainless, even through time. Also this finish is timeless. It will endure stains, scratches, dents, discoloration, etc. Thats my vote!
Since your appliances are stainless, a stainless sink will complete the look very nicely in your kitchen. It also holds up very well. I vote stainless.
We did stainless when we decide our kitchen in 2016. It looked great when new but I struggle to keep it clean and not scratched and not spotted. I never thought I would miss my white ceramic sink. I guess it depends on your tolerance for upkeep.
I would choose stainless. It is easier to keep clean and shiny. The white sinks show every scratch and stain, and the gray will look dated in a few years.
The gray in my opinion. White would be too much white. Stainless if you're already going to have stainless present will seem institutional.
That gray that your sink has doesn't match your countertop. It will be very difficult for you to find the right shade of gray paint that matches your countertop. So either white or stainless. I am for stainless.
Personally, I prefer Stainless sinks and I have satin nickel knobs and handles on our white cabinets along with black appliances and a framed metal tin backsplash behind the cook stove that is antiqued satin nickel with white. Stainless is very complimentary to kitchen countertops too. Not too industrial looking at all and I have a country kitchen with canning jar lights overhead and cast iron trivets that hang on a chain with "S" hooks as I don't want to mar the newly installed walls.
